Citrus Accented Sugar Cookies
You will need:
- 1 Cup Butter (2 sticks) at room temperature
- 1 Cup Sugar (White granulated sugar works best here)
- 1 Large Egg
- 2 tsp lemon zest (zest from 1/2 the lemon)
- 1 tbsp orange zest (zest of ½ an orange)
- 1 tsp Baking powder
- 1 tsp Vanilla extract or Vanilla powder
- 3 Cups Flour (plus more for rolling cookies out)
- 1/2 tsp Salt
In a large bowl add the butter sticks and the sugar then mix vigorously together (it helps to use a stand mixer or a handheld mixer.) Once the butter and sugar are well mixed (takes about 3 minutes with a stand mixer or for 4 minutes if you are using a hand mixer) then scrape down the sides of the bowl and add the egg, lemon zest, baking powder and vanilla extract, then beat again for 2 minutes until a creamy yellow color.
Now add the flour and baking powder in and gently mix on low speed until the mixture is “just combined” and there are no more specs of flour remaining in the bowl. The cookie dough will be crumbly, but that's ok, press it together with your hands and form it into two balls. If it doesn't come together with your hands add in a teaspoon of water, gently mix around and then try pressing it together again.
Cover the two balls of dough with some plastic cling film and refrigerate them for 3-5 minutes, or until they are cool to the tough. (This helps ensure the dough stays together)
On a floured surface or board roll out one of the cookie dough balls to desired thickness level. The dough should be no thicker than the largest lines in the cookie cutters. Once the dough has been rolled out to the desired thickness gently cut out your cookies.
Repeat for all the cookies, remove any uncut dough scraps and gently shape into another ball (this can be reused!)
Place the baking sheet in the freezer for 10 minutes.
Preheat oven to 350 degrees.
After 10 minutes take the baking sheets out of the freezer, and bake for 10 minutes (or until edges start to turn golden brown.)
Remove cookies from oven, allow to cool for a few minutes, then transfer them to a wire cooling rack for them to cool completely before frosting, or enjoy without frosting!
